Biography

Obianuju Onuoha, PhD, is a postdoctoral researcher with training in medical nutrition science, maternal and child nutrition, micronutrient biomarkers, dietary assessment, clinical research, data management, and statistical analysis. She earned her doctoral degree in Medical Nutrition Science from the University of Kansas Medical Center.

Her doctoral research focused on quantifying plasma retinol concentrations as a biomarker of vitamin A status in a large cohort of pregnant women from the U.S. Midwest. She also examined relationships between plasma retinol concentrations and dietary and supplemental vitamin A intake, maternal health and demographic factors, and pregnancy outcomes. This work was funded by the School of Health Professions PhD Student Research Grant.

Dr. Onuoha’s broader research interests include maternal and child health, micronutrient status, dietary exposures, behavioral nutrition, hyper-palatable foods, and health outcomes. She also has extensive teaching and mentoring experience in nutrition and food science.
